My kiddos have been asking for Oreo pops for a while now and to be honest it’s probable been a year or more since I have made them! I am going to make some pumpkin ones again for Halloween this year but I thought I would make these cookie pops up quickly today as an end of week after school treat for them. These are a little quicker than my Oreo pops and I can just make a few at a time instead of a whole batch.
To make the cookie pops you will need:
White chocolate melts
Edible eyes – you can make your own by following this tutorial here or you can buy them at cake decorating shops
Lollipop sticks

Melt your white chocolate in a glass bowl in the microwave in short bursts and stir. My tip for using chocolate for dipping is you need to use a freshly opened packet of melts. I have no idea why but my white chocolate never melts to a smooth consistency if its from an older packet even if stored in an airtight container.

Take your Oreos apart carefully and scrape out a little of the filling with the lollipop stick to make room for it. 
Then add a nice dollop of your melted white chocolate and place the othe sided if the cookie back in top. Allow to set. 
Once the chocolate inside the cookie has set allowing you to pick up the cookie by the stick, dip it into your white chocolate nod cover it as best you can. Let the excess chocolate run off and then place your cookie pop onto baking paper on a tray.
Then you can decorate with the edible eyes or anything else you would like to use. Rainbow sprinkles also look delightful! Allow to set fully – you can hurry that along by popping them in the fridge for a little while.
